Thanksgiving didn't go according to plan. My planning & cleaning got screwed up when Chris came home from work Tuesday morning with such a severe migraine he was crying. I have never seen him cry with the pain of a migraine. He's had a head & chest cold. The coughing intensifies his migraines and he was throwing up from the pain too. I got him into see the doctor on Tuesday and found out he has pneumonia!
I still got all my grocery shopping done & was excited to have a cozy Thanksgiving dinner with my family. I decided on a turkey breast since it's just the three of us. Turkey must be my nemesis. I chose a turkey breast because it would be enough for us and the plus side is that it would roast quickly. I thought I had done enough research, but after cooking the turkey for roughly 5 hours, it still had pink around the edges. Disappointment and feelings of failure set in as I realized all my hard work didn't turn out. Thankfully my side dishes and desert did turn out. I finally cooked green beans like my mother-in-law, chicken and dressing, and home made mashed potatoes. To top it off, we had my first ever pumpkin pie with home made whip cream.
It may not have been the dinner or the experience I had hoped for, but it was a day spent with my family. We've had a lot to be thankful for this past year. Chris has a new job with a great company, my business is growing, watching Sarah grow, and the day-to-day life of being a family are just a few of our many blessings!

I have a wonderful turkey breast crock pot recipe. LOVE IT. I'll email it to you to try out when you want something easy and new to try.
I hate Chris is having such terrible migraines. He is in my prayers.
